  • 1.5 kgMaris Piper potatoes, peeled and cut into 5cm pieces
  • 2 tspfine salt, divided
  • 5 tbspvegetable oil, goose fat or beef dripping
  • 1 tbspfine semolina (optional)
  • 4garlic cloves, lightly crushed in their skins
  • 4rosemary or thyme sprigs

    Heat the oven to 200°C fan

    Heat the oven to 200°C fan. Put the fat in the roasting tin and heat it in the oven for at least 10 minutes.

    Put the potatoes in a large saucepan, cover with cold water and add 1 1/2 tsp salt. Bring to the boil and simmer for 8-10 minutes until the outsides are tender but the centres still resist a knife.
