Tender but intact cauliflower in mustardy mature-Cheddar sauce with a browned breadcrumb crust.

Clear and checked
Heat the oven to 200°C fan. Bring a large pan of water to the boil with 1 tsp salt. Add the cauliflower and simmer for 4-5 minutes until barely tender.
Drain very thoroughly and leave in the colander for 5 minutes so steam escapes. Excess water would thin the sauce.
Melt the butter in the medium saucepan. Stir in flour and cook for 2 minutes. Gradually whisk in warm milk and simmer for 4 minutes until smooth and lightly thickened.
Remove from the heat. Stir in both mustards, nutmeg, 175g Cheddar, salt and pepper.
Arrange the cauliflower in the baking dish and pour over the sauce. Mix breadcrumbs, 25g Cheddar and olive oil and scatter on top.
Bake on a tray for 20-25 minutes until bubbling and browned. Rest for 5 minutes before serving.
